Healthy oatmeal muffins with blueberries

Are you looking for healthy muffins? Then you've come to the right place.

These muffins are ideal as a snack but also for breakfast.

Ingredients

  • 1 banana

  • 2 eggs

  • 100 ml (almond) milk

  • 2 tsp baking powder

  • 125 g oatmeal

  • handful of blueberries

  • 1 tsp cinnamon

  • pinch of salt

  • a dash of sunflower oil

  • optional: 40 g coconut blossom sugar

  • optional: honey

Recipe

  1. Preheat the oven to 340 degrees F° (= 170 °C).

  2. Mix the oatmeal with the banana, the baking powder, the eggs, milk and optionally the honey and coconut blossom sugar so that it becomes a paste. Do not mix it too long.

  3. Add the cinnamon, a pinch of salt and a dash of sunflower oil.

  4. Finally add the blueberries and mix everything together gently with a spoon.

  5. Divide the paste over the muffin moulds. (12-15 muffins)

  6. Bake the muffins for about 30-35 minutes until golden brown. The muffins are ready when a knife comes out clean and dry.

  7. Let them cool down and enjoy!
